i need help cleaning my carbs and gunk from engine

My bike is newly bought, it is a 2002 SV650S but has been sat in a garage for quite a long time hence it has only 126miles on the clock.
I took tried to take off the carbs today to give them a good cleaning. Everything was off except for the last front bolt which connects to the clutch cable. This screw threaded on me so I can't get it off. Any ideas? Can you pull the clutch cable from the handlebar instead ans still work okay in the carbs with it connected?
Where can I spray the carb cleaner if the bike is running or the carbs still atached?
Also I looked down the holes into the engine which the vacated carbs have left uncovered and saw what looks like a whole heap of black gunk ontop of the circular thing (see picture attached. The red is where the black shiny gunk is)

How do I clean this ? I have already used chevron techron in the last tank of gas.

Something is causing me to have very bad response when in low rpms, the bike shudders ans vibrates badly sometimes causing it to stall.

That is carbon on your intake valve. Normal. Dont try to clean it. Clean carbs, and run fresh fuel.

I sprayed carb cleaner down the two intake valves on the carbs. I started the engine, applied a little throttle and sprayed into the hole not on the slider. Whenever i do this in the hole nearest the front of the bike the engine instantly cuts off. I can spary into the second hole and the engine keeps running. Why is this?

Not a clue... but avoid spraying anything in a running motor... you never know what the hell will cause it to misfire it a bit and end up with a misfire into the crabs right into the spray you have and might end up having a little carb fire. Carb cleaners are meant to be used on carb parts, not in a running motor... they are loaded with toluene (flammable) and acetone (mother of flammable)...

My next problem is the bike keeps stalling on me when I go down to first gear. This is becoming a pain in the arse. I get to stop lights and shift to first then the engine shuts off. Do you know the cause of this? I'm presuming it's connected to the fact that my bike shudders like crazy and makes a loud knocking type sound when I'm slowly accelerating from 1st and 2nd gear.

Well my tips might be a bit un-educated, but have always worked for me.
Replace The Plugs, Thow Some nice NGK's in there. $5.00
Check The Air Filter, Replace Or Clean.
With Carbs what i like to do is ( Engine Off ) spray some carb cleaner right down the jet ( A Good Amount ) run the engine. Do it again, Then get some compressesd air and spray the hell out of the carbs. In the jet etc... The Put some more carb cleaner in there , run it.
Like I said this is basic info from me, I am not a guru.

I'd recommend taking it in to a shop to get fixed lickety-split instead of trying to screw around with it yourself when you're not sure what you're doing.  No offense to you - most people aren't mechanics, and some really shouldn't get their hands in there at all.  My honey (who is a bike mechanic here in Toronto) gets to see all kinds of bikes with worse problems because someone tried to fix it themselves first.

If you're not already knowledgeable on the topic of motors, bring it to someone who is.  It'll be quicker and you'll have to pay a bit, but at least your bike will be running as it should, sooner.  :thumb:
