Is there anyway to make a GS500 more like a standard riding position?  I think the bar risers help out some?  Can anyone vouch for this and if so where can I pick some up and what will it cost me?  I'm sure there's  no way to modify the pegs to make the legs in a more comfortable riding position?

You could buy a dualsport & sit straight up! (guilty)
Then just use the GS for thrashing ;)

Eh?

The GS500E IS a standard motorcycle...

Maybe you should try one of these:

I would love to buy a dual sport, but my finances will not allow it at this time.  I really like the Vstrom 650.

Bars are a good cheap way to get sitting up a bit straighter.  You may want a bit more pull back than is provided by the dirt bars -

If you have the leg length for it you could have the seat reupolstered with thicker padding to raise your seat - thus giving your legs a bit more room.

Two easy ways to do the bar risers -  First, just find a bike junkyard and get a second set of bar clamp caps similar to what you have.  Remove the existing clamp and bars - set the recycled ones upside down in their place- re-snstall the bars and your own clamps with longer bolts.  This will raise the center of your bars a bit over an inch.  Otherwise you can try gen-mar bar risers http://www.zianet.com/GenMar/ they will raise the bars about 1 1/2 inches and move them back about 1 1/2 inches
