Simple question: is there an easy method of getting the throttle and choke cables disconnected from the linkages on the carbs without bending the linkages?

Yes ... choke ... close up the adjustment at the handle bar ... then pull it out and get the cable inner out of the track and get the spring un seated ... then should swing out and come off ...
Throttle ... close up on the bar as usual, then loosen the top lock nut 3-4 turns and start tightening (clock wise though it wont get tighter) the bottom lock nut after it gets out of the tight fitting its in ... then it should fall to the bottom ... then yank the cable end out and swivel and get it out the linkage ... damage to that area where some gorilla mechanic use plier to put in ... OK you screwed ... open it or somehting with screwdriver and get it out ...
Cool.
