GS500 too slow?

dood, the GS is friggin awesome ... I have passed ZX6, 954, Busa, CBR600s and others on the track with a GS ... I out-brake soo many of the supersports and have a BLAST on my lil ol GS ... its cheap, its light and takes all the punishment you can dish out ... The GS is a bike with character

Wait until you're older and can afford the insurance.  There is no point in "picking" a bike until you can afford to get it.  Things change every year.

Keep riding your 360 and get GREAT on it and by the time you're ready financially for a SS bike you'll REALLY be ready for it.

And yes, a 750 is a great bike.  So is a 600.  A 1000 is (IMO) too much for the street.

I too learned on the dirt.  It's a great teacher, it humbles you a bit without killing you.  MUCH better crashing in dirt than on a road.  But remember, gunning it in tight turns in the dirt is good, gunning it on the street with a 750 is bad.

I noticed that the bike is VERY light, which i love. I prefer the look of the older bikes usually, the sport bikes are all plastic and I like it when you can see the engine. The Triumph speed triple is, I think, the nicest street bike, minus the double headlight thing. Anyway, ill thrash around on the GS for a bit and see how I like it.
