How long does a chain stretch for

I have 800 miles now on the GS, and i just noticed tonite that the chain needs to be tightened again. Last time was about 650mi.  Ive needed to tighten it every 150-200 miles since ive been breaking the bike in.  How long until it stops stretching so often?  How often does a broken in chain last between tightening?

A chain going out of spec within a few hundred miles is generally one sign of failure.  Odd to have one go that soon, but check the links for side-to-side play.  If it's going, that's one that they should replace under warranty.

You're checking it per the manual, and it's outside of the allowed play?

I also noticed that with the chain having more slack, i feel an "umph" or jerk when letting the throttle all the way out and then get back on the gas (in any gear), does this sound like a chain slack issue?

If it was a new chain, it takes some time for it to get "settled". It will stretch until it reaches its happy spot and stay there for longer.

another way to see if it is steched to much is to see if you can pull it away from the rear sprocket, not from the top or bottom but from the back.  If you can do that and the chain is tightened properly, .08-1 inch of play, you need a new chain.  I had a brand new F as well and I had to frequently adjust the chain.  I lube and check it every 500 no and havn't had to adjust it in a while.  I have almost 3k on mine just to let you know.
