It's been done. There are pictures. It looks hideous. At least, with just the chicken head fairing. Maybe if you can make the chin spoiler work, it'll look better.

Look around in the gallery, there is a 2004 or 2005 blue GS with only the upper fairing.  As Nick said, it just doesn't look proportioned correctly.  I hate the fairings on the 04+ GS's, and the upper fairing is the worst part.

It looks like...Darth Vader.  Er...Dark Helmet actually.





These pictures don't even show how bad it really looks.  Go outside and pull your side fairings off, it only takes about 5 minutes.  I used to do it once a week to wash the bike.  Until...I ditched the fairings because they are so freakin ugly.

try an SV upper fairing on it. I dont like the single headlamp look either doesnt fit the bike at all. if you want to do your own custom stuff there are some kits you can purchase just the upper fairings for and just the chin spoiler.
