how often should i have to adjust my clutch?  I tightened it up so the clutch is real touchy (to keep me from stalling the bike), but now i noticed that it seems to be going back to its old ways.  you have to let way out on the clutch before it takes off and i hate that.  is there a possible problem that I'm not aware of?

Sounds like you need more practice taking off from a stand still.
It takes practice to get the feel.
If you stall when it's cold, try using a little more choke. Put the choke on and sart the bike. As it warms up the rpms will rise. Ease the choke back to bring the rpms down. But don't take the choke comletely off until you've ridden the bike for 10 minutes or more.
It should be warmed up enough by then. If that don't do it. Then you need to give it more throttle (a little) as you let the clutch out.
You could be letting the clutch out too fast and not giving it enough throttle. That will cause it to stall. So practice somewhere like a parking lot.

Not real often.  Maybe every 3,000 miles?

All I can say is adjust it ... again.
