I am not a person who can talk bike lingo but loves owning and riding a GS500 but have a few concerns
and don't know where to start to correct them. Please explain you advice / solution in layman's terms.

1.  When I am riding the bike it seems to be shooting out little air bubbles at vairous speeds from the
muffler tube that doesn't really seem that normal.

2.  The speed, it takes my motorcycle a bit of warming up (3 - 4 minutes) of riding before it can go
over 30 miles per hour.  Is this normal?  What is wrong with it? / What do I need to get fixed? When
it does start going faster the speed seem to be inconsistent, i.e: Depending on how much throttle I am
giving it takes time before it actually meets up to the acceleration.  Sometimes, it takes off all of a
sudden and I feel like the bike is about to do a wheelie so I have to hold on to the handle bars real
tight. I feel like that dangerous but not sure if thats "normal" again for motorcycles.

I tried to explain my situation in as much detail as possible, I am sure I am not using the right terms
but If you get an idea of what I am trying to say, help!!

Thanks,

Adam.

try to warm up your bike better before going for a ride. Let's say give it few seconds on full choke then decrease the choke to keep RPMs between 2000-3000 RPM and leave for 30 seconds 1 minute (depending on the weather) the turn the choke off. and let it idle for 5 minutes.  twist the throttle gently and check if the rpms climb freely up and go back down. if so you can go for a ride.
hope it helps.
BTW do you have the owners manual?? if you do you can check the basic stuff over there.
cheers

from the sounds of it, you may need to clean and synch your carbs, but try letting it warm up first as the poster above me suggested,  its a LOT less effort to do than pulling the gas tank and carbs along with associated parts.
