What is the easiest rear wheel swap for a 05 gs500?   sv650???

Agreed.The Katana wheel is the easiest.The SV requires a swing arm swap.I have just recently completed a Bandit 600 rear wheel with a 160-60-17 tire.I wouldn't recommend the Bandit 600 wheel without a strong knowledge of motorcycle geometry and machining.Dgyver an I tackled that one.I found out by measuring his swing arm and my 2,that none of them are the same width where the wheel mounts.So my set up required machining.

Bandit 400 is a drop in. Katana 98-02 is also drop in. SV 650 is a bearing swap or a swingarm mill job away from a fit, yea screw the milling, swap bearings. The wider GSXR wheels etc get more complicated.

Bandit 400 is not a direct fit. The hub is narrower and requires additional spacers.

Actually it is a 98+ Kat 600/750. Not just limited to the 98-02.
Common sense in not very common.

yea the only thing you really need to do for the kat is bend the brake arm and add washers to the rear sprocket.  then drop in and make sure the chain is alligned properly.  dgyver  has done a great write up on this  along with the kat front end swap..

Washers/spacers are drop in. OK I call it as a drop in. Anyway my 400 wheel went on one bike without any mods and 1 washer if I remember.
Getting into more work, like bearings etc is not drop in.
