Conundrum - Want some advice regarding a seized engine

I purchased a 2005 bike with ~7k miles and a seized engine last week.    Yesterday, I purchased a wrecked 1990 with a working engine (and roughly 23k miles).

Here is my dilemma:  I have the '05 motor out of the frame.  Should I take it apart and attempt a repair (I have never tried to fix an engine or a piston before)? ... or should I just do an engine swap and leave the inspection to someone else?

The story I got on the '05 was that the previous owner was riding the bike at high speed (~100 mph) until it started slowing down and eventually siezed (at ~40 mph).  The oil on the engine fins and caked around the oil filter cover lead me to believe that oil starvation is what caused the lock up.

What am I getting myself into if I do decide to try to pull apart the '05 motor? (I had the top cover and cams off, but the rest of the head didn't seem to want to budge... is there a trick to removing it?)
