better performance or better [louder] sound?

Performance=full system including header necessary. Better for top end.
New, your options are limited to Vance&Hines.
Used, you can find Yoshimura, Hindle, V&H on ebay or occassionally on this board. I got lucky when I randomly emailed an ebay seller [selling something else] if he had an exhaust.

sound=slip on muffler only, may give you better low/mid range though.
New, limited to Cobra for gs500 specific [F1r, F1s models].
Used, same as above. You can also weld on a can from another bike. Not sure which though, look for a 2" pipe section to fit over the stock 1.75" o.d. pipe; or weld to cone shape trasition piece at front end of muffler. I think Srinath welded on a yosh from another bike on his stock pipes but not sure what bike.

I've been told the old cbr600's [hurricanes] had midpipes close in size to gs500 pipe. It'll take a trip to the local salvage yard on yoru part I think.

Try emailing D&D at dandexhaust@msn.com  I spoke to someone there last Spring and it seems like they have a bunch of extra cans just lying around.  If you wanted to make your own exhaust, then this might be a good way to do it.

I got race exhaust by lurking on some road race forums.
