I never had any speed wobbles or anything on mine with the stock bars, although the front end is more than happy to shake if I jiggle the handlebars intentionally, so I wouldn't be surprised if I would've had one someday. I never had any problems with the front end feeling unstable with the original bars. I just know how much more comfortable it is when I'm leaning the bike over.

I've heard that clubman bars don't work on the GS because they'll hit the top triple. Someone said he had to cut his in half, and weld them back together with an extension for them to clear properly. If I had to do it again and buy new bars I'd probably just get drag bars. I think they'd be about the height I was originally looking for.
