Been thinking about grandpa alot lately. We went to Olive Garden tonigt for dinner. Growing up in with my father's side being Italian you'd think that by almost 30 I'd tried most all Italian dishes. The local Olive Garden has not dissappointed me anytime we've been there. So I try something new nearly every time we go. (which isn't often lately) Tonight I had Pastachetti with Chicken. Suggessted wine for the meal was a Chianti. I'd never had either before so I figured I'd give it a shot. I was blown away. I seriously thought I was going to have an orgasm during my meal. It was that good. Having never had  a Chianti before the first thing I noticed was that it was a bit warmer and dryer than what I normally have for wine. (normal wine for me when we go is a Moscato).  But I was really impressed. I don't remember all of the chesses that were in the Pastachetti but there was also a cheese type sauce for the chicken as well. (grilled chicken, the sauce, roasted tomatoes, spinich on top.... f%$king delicious). Although it was all contrasting food tastes, it blended perfectly to me. I wanted to kiss the f%$king chef. I often wonder if my great grandfather had similar experiences back in the old country eh? Ah, cheers to good food!

take i believe its either fintina cheese or feta, an icecream scoop. scoop em out into 1- 1.5" balls. and freeze them. after an hour take them out, squash them out into a cookie like shape. then you bread them, and deep fry them. and put on paper to drain. after which maybe a lil powdered sugar, and toped with marmalade. foodgasmic desert there. perhaps with either muscadine or moscato wine for drink. although that may be a too sweet combination/pairing. but it works for me in small amounts of each

Hey, Jserio, not trying to piss you off but what there is of Italian food that I like I can make better at home and prefer to eat there, primarily spaghetti with Italian sausage and garlic bread and a salad.  If you're an Italian food nut, you can't go wrong with chicken parm and fettucine alfredo.  This is coming from someone who recently tried to like calimari at Olive Garden and the more I ate the yuckier it tasted.  I ate 7 pieces.  I had enough.
