Will '97 cylinder head fit into a '02 gs500 ?

According to bikebandit the cylinder head assembly for both bikes is the same, you shouldn't have any problems. Double check with a mechanic though to be sure.

Thanks for the reply, i don't relly have a mechanic to ask this question since i work on that bike myself. We'll see during assembly

Yes they will. 89-02 are the same mechanically.  Only the colors changed, black to silver. 04 still has the tach drive port, which was removed in 05. Make sure you get the cam shaft caps with the head. They are bored with the head. I have yet to see any swap over.
