K&N Drop In, 125 jets. 1 or 2 washers?

I'm eager to get my new used bike running and I ordered Buddha's stock jet kit which comes with 2 washers and 40/125s.  Today I noticed that the P.O. put in a K&N drop in air filter.  Since the jetting chart suggests a 127.5 yet I only have 125 jets, I'm wondering if I should go with recommended 2 jets instead of 1.  Any thoughts?

Thoughts:  Go with 2 washers and see how it is.  Read plugs.

The drop-in has the restrictor in it. The final settings that worked well on a 75 degree day were: 125 jets, 1 washer, carbs 3.25-3.50 turns out. 

That said, this was my first time riding a GS500 in a long time, so my only reference points are my old FZ6 and current GPz750r.  The GS500 seems to lack grunt down low, but pulled decently through the midrange and well in the high end.  It's kind of the opposite of my inline 4 GPz which has lots of power down low and in the midrange, but doesn't give much more thrust up top.
