First off, I absolutely love the cafe racer style. So, I've been looking at several that are either cafe or can be turned into one... So, heres what I'm looking at.

CB750. This is the one

That's actually a pretty good price ad long as the condition is as it appears.

I'm not a big fan of the 750's just because of their size, so I would keep an eye out for a large twin. Like a CB450, XS650, KZ650 (if you're into Kawasaki.....), or if you're a real glutton for punishment a GR650.
83 GR650 (riding / rolling project)

It's opener there in the wide open air...

I prefer the stock CB750 look, but that's a taste thing.

One thing to keep in mind is that a classic bike is going to have old rubber and hence leaks.  Unless you are willing to take the engine apart and replace all of the gaskets, there will simply be leaks.  Also, parts will be more expensive.  They may not be expensive, but they will rarely be cheap.

get a Deus Ex ... afterall cost is no object if cool is onvolved ... right!?  O0

I wont say it will be a true cafe ... and yes on the punishment like big rich says ... but a buell blast tail section and tank and tank cover all fit on a GR - straight weld on for the tail and the tank etc well, semi bolt on.
The swingarm on a GR can, should (and well, suzuki's designer should be stuffed into a paint drum and rolled down hill for designing it) ... swapped out for a GS or katana or a dirt bike - like an RM250.

Otherwise most standard GS mods - like FE swap with katana/GSXR etc etc will work.

So an unholy union of buell suzuki and unknown ... will make a cool GR based bike.

Cool.

Au contrarire mon ami, Parts you take off are valuable, you can ebay them and make $$$.
Then, the parts you are putting on are common atleast in the case of my method, and guess what @ the end of it, motor, carbs, parts of the frame and electrical system are all that will be GR. The rest are from other bikes ...

+1. My front end is from a GS650, rear wheel is a GT750, tank from a GS450, seat from Airtech, etc, etc, etc. Somebody asked me what was original on the bike and I said "The frame, swinger, and motor. Not much after that......."
