I hopped on the bike yetserday since it was nice out, and as I was letting it warm up...well..

Ungodly amounts of white smoke poured out of the exhaust, and next I smelled gas. I leaned over and looked under the seat, and gas was leaking everywhere from the carbs.

I took her for a 200 mile trip about a week ago and hade absolutely 0 problems out of her. I am thoroughly confused.

Halp?

my bike gets pretty crazy in the cold with full choke and adding throttle, way over rich. Yours, yours sounds like a float problem. a big one!

Rap on the side of the carb bowl with the handle of a screwdriver.

Check your oil as well (if it is in fact bad floats/float height), there will be gas in it and you'll need to change it.

+1.  Oil and Gas mixed together have a lower lubrication effect.  Check oil and sniff for gas on the dipstick.
