Rejetting Questions

Over the winter I was going to put on a V&H exhaust and K&N filter. WIth those I know i need to rejet and found on the wiki that i need
"pilot 22.5
main 127.5
washers 2
turns 2.5
slightly rich
people 1"

The previous owner said that he had rejetted the bike a couple months before I bought it.  My questions are:
Is there a way to check to see what the settings are that the bike is rejetted to?
and
If I need to rejet, where can i get the necessary parts?

I bought my jets off ebay and there are small numbers etched in the end of the jets so you can see what they are.

My jet numbers are in my sig. I also have a K&N lunchbox and a Yoshimura slip on. Mine is 2 turns out and no washers
