Who/what are you using?
Where did you get them?
Are you using the GS5 perches or something else?

LSL levers from Germany. While many brake levers are compatible, only LSL makes a 100% compatible adjustable clutch lever. all other brands you need to change the clutch perch. Priced about the same as ASV or other high end levers. About $125 each.
I've looked at and even tried the cheap-o-s from Ebay out of China or Hong Kong. There is a difference in quality, fit and the feel of them.

Had a sv650 perch with some $30 eBay ones and had a 2011 speed triple master cylinder (brembo) with the same eBay lever to suit. On the f800 I'm using stock levers cause they work and feel nice in the hand and have some adjustment

Adjustable brake levers are dime a dozen. 100% compatible clutch lever(using oem gs500 perch and cable) is a whole other ball game.

Another here with LSL's. Adidas and I went in and split shipping on a few sets. I got mine black with black adjusters(you can order whatever colors you want) Haven't had the joy of riding with them, but they are definitely the highest quality lever i've gripped. Solid feel, amazing construction, more adjustment settings than most, and they look so damn good! haha

So all that will be needed to run the ebay ones or even some decent ones that aren't made specifically for the gs500 is a sv650 clutch perch? Does the gs500 clutch cable work with the sv650 perch?

2000 GS500E 8700 Miles. Dumped once. Lowered apparently. has 9400 miles as of 12/12

That picture is of just a replacement lever HALF of the complete brake lever. Be aware that is not a complete brake lever.
Motion Pro does make a nice stock adjustable lever. Early GS500's did come with an adjustable brake lever.
They never came with an adjustable clutch lever.

Yea you want to avoid yourself a lot of pain ... switch to a katana clutch perch. Then you can slap on $30 a pair levers. Now it just goes perfect with the katana FE I got slapped on he he ...

Difference between the quality of cheapo levers vs $125 will be obvious, however the bigger obvious part will be the crappy 1982 tech motor and the steel frame, the crappy a$$ front suspension, the chitty overall everything and the low level of tech or precision on the GS ...

Sorry switch to a suzuki GS550 or 650 or some such ... cos katana has no mirror mount.
The katana levers should fit that ... make sure.

out of curiosity what is the advantage to having adjustable levers?  Are there adjustments I should be making to my stock ones?

More comfortable so you would not have to reach your fingers out as far to pull the lever in
