Adjusting idle screw, having to choose b/n hanging idle and bike dying when stop

You are having those screws back themselves out ? No one seems to have reported that so far on these, but its good to know.
I don't know of a great way to stop them. - Maybe make a flat bar set that you can tighten against its head across both of them.
Something like a Long H figure tightening against the 2 heads so neither can turn. Maybe 2 bolts and wing nuts or thumb screws and you take that off to adjust it and would keep them where you set them.

First spray any carb spray, starter fluid, brake cleaner etc around carb boots/air box boots while it's running and see if that effects rpms. If it does you have an air leak. Cracked boots, intake orings or improperly seated boots.
When was the last time you adjusted the valves? I'd do that then pull the carbs, thorough cleaning, set original factory air screws to where they are recommended for factory setting, Set your idle after warmed up. Grab a small 1/4" ratchet with screw tip to fit air screw to fine tune adjust with a vacuum gauge after the bike is completely warmed up. Clean the plugs if possible and keep a spare set of NGK on hand if needed. Good time to replace fuel line if needed and replace fuel with fresh fuel if the fuel is aged. Knock out some periodic maintenance and in your effort you will find and correct the problem.
