Title: revs after turning off choke?

Um... Like the topic title.  My 2002 GS idles fine, but when you turn off the choke, it revs up to 6 or 7k rpm for a few secs then settles down.  It doesn't seem to do this while it's running with the choke on or off, just when you're switching it off.  Any ideas?  Something that might be sticking?  

Oh, my roommate started to turn off the choke at one point and it freaked her out when it started revving, so she jerked her hand back.  The choke was at the halfway point and the engine did not stop revving til I turned it off the rest of the way.

When I start my bike with the choke full on it begins at about 3 then it rather quickly runs up between 4-5, sometimes over 5.  Then as i slowly start backing the choke off, the revs do slightly jump up, but as i continue closing the choke, they go back down.  This is only noticeable if i am closing the choke s-l-o-w-l-y.  After that, the more i close it the lower they go until, when fully off, the revs are at idle speed.

By the way, having just got my owners manual the other day, i found my starting procedure has been incorrect.  I usually let it run for about 30 secs at 5 then backed off to 3 for about another 30-45 secs, then closed the choke and rode off.  Manual says back off to 3 immediately.
