It has been hapening more and more lately
it used to always do it after I use the choke in the morning, now it happens at every stoplight
what is the prob? clean carbs? adjust carbs? cables? timing?
I have been dropping the idle by using teh brakes and engine to slow her down
I am sick of it and want her running like new!!!\

You've already tried adjusting the idle down with the knob between the carbs?
If so, then I suggest a carb cleaning. It doesn't take a very big speck to block fuel flow through those pilot jets. (And too-little fuel in the mix means lean, which can cause the overreving.)
Another pre-disassembly idea is to try the WD-40 test, and see of the revs go up even more because of an intake leak.

Sounds like your carbs are prime candidates for rejetting. Has that ever been done? Lean condition due to jetting for EPA causes the rising idle. I used to do the same thing with the brakes and clutch to lower it. I never rejetted but adjusted the idle down a bit low to compensate.

I had a problem with idle, with the following symptoms.
It started like this.
Would run ok but in traffic the idel would shoot up to 4,000 rpm and remain there. I would lower it with the idle adjustment screw and it would drop. Would be ok for balance of the trip.
Next day the idle would be too low. I would raise it. After about 30 minutes in traffic it would shoot up again. I would lower it and the whole thing would start all over. After a while I just left the idle very low and would just my hand on the throttle to keep it from dying.
After a period of time the bike was hard to start. It would start off on one cylinder for about 3 seconds.
I had the bike re-jetted but it turned out to be the valves.
I never expected that to be the case but a couple of other guys had the same problem with the same solution.
Try to give us a more detailed description of your symptoms.
