ok what is the wides softes most lean friendly rear tire (tyre for my euro friends) that i can get without doing mods?

same with the front what is the softest , read stickiest, tire avail.

Probably Pirellis, though I'm sure Jack will chime in about the Avons.

Sport demons if you want to stick with the stock 110/130 sizes. Our Breva has them on and they are pretty nice.

But the best DOT street tire available that will fit a GS's stock rims are
"Diablo" SS tires in 110/70 & 150/60.

They just require modifying (beating a dint in to clear the edge of the tire) or replacing the rear brake stay arm.

The OEM rear brake stay is that piece of square tubing connecting the rear brake caliper to the swingarm. The way its mounted, it cuts into the plane that a wider rear tire would occupy.  The quickest way to gain the clearance for a wider tire is to mark on the arm where the widest part of the tire is, remove the arm, and then beat that part of it flat(er) with a hammer while trying to keep it fairly straight.

A more elegant solution is to replace the stay arm with another one fabricated from either thinner stock (1/2"x1/4" etc.) or by building one with a "kink" in it.
