I got an '03 SV650S, and was partially expecting to lose all interest in the GS500...Wrong, big time wrong. They feel very different. The GS500 is super skinny and light, it feels like a dirt bike, and is better for lanesplitting. The SV650S feels taller, more powerful, much more aggressive. The GS500 is my ratbike commuter, the SV650S is my primadonna bike, only taken out on weekends.

I'd have to agree... except that I got the SV used, so it's the track-bike-not-too-much-of-a-tragedy-if-I-wreck-it.

I had the same experience. I bought a '04 Triumph Speed Four with the intention of selling the GS500. It's been 2 months, and I still haven't seriously tried to sell the GS. It's a much better commuter bike, and is so much easier to handle at low speeds. I only take the S4 out on weekends also.
I've already come to an agreement to sell my GS500 to a friend of mine, but in the future I hope to pick up another. I can't imagine a more suitable bike for in-town riding.
