Fry you about 5 pieces of bacon or enough to render 'bout 2 to 3 tablespoons of good old bacon grease. Keep your heat up ('bout medium high) and put in 'bout 2 to 3 tablespoons of flour and make a roux (gravy). Stir on a regular basis until brown. Pour in 'bout a third cup of strong coffee (preferably from the bottom of the pot-that stout stuff). Now pour in 'bout a third cup of water.
A little at a time. Stir well. This can't be too thin nor too thick. Season with salt, onion powder, and cayenne pepper to YOUR taste. It needs to be so tasty that you could drink it. Back off on the heat to about medium. Now crack two eggs gently into the gravy and cover and cook until the yolks are hazed.
Serves well over toast with crispy bacon crushed and sprinkled over it.
Feel free to adjust and substitute. Enjoy and Happy Thanksgiving to you all.
Wow, coffee? You had me till then. But I'll try it! That's a different twist.
Have a good safe turkeyday!
Hey Rob, this is a spinoff from an Italian dish (that I can't pronounce) that uses tomato sauce instead of the coffee. Very delicious as well. Wilson
Thanks for the well wishes. Wilson
I've had that b4, I'll have to call my brother in law, he's italian. I'm a coffeeholic so I'll give it a whirl!
damn you , you got me hungy again ;) ;) ;)
That fits well into my 'sounds gross, but actually good' diet. Anything involving bacon grease and cayenne pepper has to be good.
Nice one Wilson, I'll try that, my experience of Coffee catering is pretty much restricted to Panecotta the creamy Italian dessert. I've never tried it savory.
I bought some good horseflesh, and duck last week over in Flanders, hope all you guys enjoy your "Turkey day" If I were not up at 0430 in the morning I would post a recipe, over the weekend perhaps. Keep on keepin' on and keep cookin'
I did a nice pork in apple and apricot sauce midweek, mmmmmmmmm.
CAL!!!! You are always cooking Pig and Fruit!!!!! Horse sounds great. I need to really focus on cooking Duck. I love Duck but am not well versed in cooking it. The last time I had a part in cooking one was 25 years ago at a football game party. God we were drunk as a tribe of Indians on moonshine. We put it in the oven to bake/roast it and every so often someone/everyone would open the oven and SLING in whatever they were drinking. Hell, that duck had rum, vodka, wine, and beer slung on it for hours. Hell, we didn't even know how long to cook it. Hell, we didn't care. We just "had the vision" of how good it was gonna be! Hahahahahaha. We were so damned drunk that duck tasted GOOD!!!
Anyway...........I do a pig backstrap (loin) smoked with either orange marmalade or honey on a bed of rice that is pretty damn tasty! I think I posted the recipe for my "pepper-loin". I have also cooked a loin in the oven (casserole dish) with kumquats, onions, and fresh garlic. Have you ever eaten kumquats? They are like little oblong oranges. You eat'em skin and all. Only a couple of seeds in them. They are sweet. I have a Kumquat tree/bush that will NOT stop producing all year long.
Will read your recipes/posts next week. Have to go "back home" to let relatives do some scanning. Have some family photos from the late 1800's and early 1900's they want. Always entertaining and a pleasure reading your posts. Until then, Wilson
I cannot imagine how this will taste ... But IMHO ... the lighter the taste of coffee the more disgusting I find it. Strong espresso type yea I'd drink it. The standard coffee - pathetic.
Cool.
Srinath.
Mmmmmmmm, how about some instant coffee!
Blaaaah!
Boy: "Hey, Mom! What's for dinner? Not horseflesh again is it?"
Mom: "No Tommy, I made it a Helper night!"
<White glove with eyes and mouth appears>
Glove: "Make it a special night. . . with Horseflesh Helper in the new Seabisket Rigatoni flavor!"
Or we could perhaps judge the absurdity of this remark:
"I got some horseflesh."
"Mmmm. Horseflesh sounds good."
Really?
Really?
Don't knock it till you've tried it matey..........really.
I try it every time I lick an envelope.
Can't you just stick to bangers and mash?
