Don't worry about the different years.  The engine has remained mostly unchanged throughout the bike's life.  ~40hp, and ~26 lb-ft torque.
I believe the tank capacity was upped when they switched to the new tank design in 2001.

The only changes have been more or less cosmetic.  Some of the older ones had clip-on bars.  They had hard-mounted pegs up to a certain year before they switched to folding ones.   Available colors, etc., etc.

Here is a set of "official" specs for the 1997 model year: GS500E Specifications (http://www.suzukicycles.com/sr-97/gs500e.htm)

As far as I know nothing changed between 1996 and 2000 except for the paint colors.  Maybe a slight difference in the wiring diagrams.  I own both a '96 and a '99 and I haven't found anything different yet....

Miles per gallon?  I get between the high 40's and the mid 50's on both bikes - slightly higher on the highway unless I'm fighting a headwind.
