I would (and do) go with option 3 for the tire sizes.  It's the OEM size, works well, and is generally a couple bucks cheaper than bigger sizes.

What tires are you considering from those manufacturers?  I would consider the Bridgestone BT-45, Avon Roadrider, and Metzeler Lasertec.  I would also consider the Pirelli Sport Demon and Michelin Pilot Activ.  All of these are available in OEM sizes and are probably comparable with each other in performance.

1. The front tire will slow down your handling (by a minute amount), but will give you gobs of traction (Pirelli not available in 110/80).

2. Will give you better front tire loading and traction, you will lose a minute amount of bottom end with the larger rear tire, but you get better fuel economy (it's almost the same as dropping a tooth on the rear sprocket, hardly noticeable).

3. The bike will feel spritely (and will save you $'s).

The Metzelers are good, but tend to be more expensive, so there are fewer of us who use them, when there are as good tires for less.
