After about one year of tinkering with my bike ive recently been able to ride it around my neighborhood. I have noticed a couple more issues with the bike...1)while at a stop sometimes the bike will die when i release the clutch...i was thinking that i should maybe just make it idle a bit higher with the screw. 2) The bike will sputter and cough a lot when warming up and while idling. Is this normal of bikes that havent been running for a while?

As to your first question , i wouldn't adjust the idle unless it's not idling correctly . Sounds like you just need more throttle ... the GS won't pull away from a stop at an idle (that is , if my interpretation of what you're saying is correct ... if it's not , then i look like a jackass hehe)
Have you checked your spark plugs lately? Clean the carbs?
Yup i just recently cleaned the carbs and replaced the spark plugs as a part of my overhaul to get the bike running. For about a year now the bike has been not working with some over revving issues and just not starting sometimes. So ive replaced spark plugs, changed oil and oil filters, air filters and rebuilt the carbs.
I see what you mean with more throttle. I dont have much experience riding so ill just chalk this one up to my newbyness.
I disagree , i can drive off at 1000 rpm , and it doesnt splutter or nout . hmm , then agen , my bike does run more or less perfect , i dont bog at any RPM
