Title: Quick question on K&N drop in filter. Worth removing restrictor?

I'm finally getting ready to do the valve check and rejetting that my '91 desperately needs. According to the rejetting matrix I'll need 125 mains with the restrictor in or 127.5 mains if I remove it. I'm going to be keeping the stock exhaust which I understand is probably the biggest bottleneck. Is there a preferred way of doing it? I'm guessing it probably won't make much difference, but since the lunchbox and stock exhaust apparently have trouble playing nice I thought I'd ask.
