bought a 1992 GS500 after a close encounter between my VX800 and BMW 740il (driver made U turn on a one-way-street)... VX was proclaimed as a total loss by insurance
so far I have followed recommendations of the forum to get it back to happy and healthy state of operations (oil and oil filter, air filter, fork oil and seals, battery, new handlebar, brake oil, new brake lines, and pads, front tire...) but am having an odd issue that I haven't been able to find in any of the posts
bike couldn't idle bellow 3500 rpm, so i went after the carbs, and surely (after stripping the float bowl screws) i found pilot jets completely blocked, I followed instructions from:

I put it all back together and the bike started right away, 10 minutes later I adjusted the idle to 1200 rpm using the adjustment screw (big one). After that I started adjusting my choke cable and started noticing that as I pulled choke the bike would start dying but would then 1-3 sec later rev up, didn't think much of it at first, figured I just need to adjust mixture screws (which I set at 3 turns out per boards instructions)
Next time on the bike, choke worked well (and still does) it starts cold right away, few minutes later idles fine at 1500 without choke, but as it warms up furher lowers to 1200 - the strange thing (and slightly scary) is that now after I add throtle the engine falters and then with 1-3 sec delay revs up, also when i release the throtle the engine stays reved up for 1-3 secs, which is a little unexpected especially as you are approaching a red light and expecting the bike to start slowing down and nothing happens - so i end up jumping on my brakes. I have gone through the full range on the mixture screws without much success. Another anomaly is that when the petcock is in prime (pointing upward) position the bike starves (works well in the other 2 positions Res and regular). I looked at the 2 posts bellow for clues, and am ready to go after the needle in the carb, but was wondering if there are any other oppinions first (fuel thing makes me think i may have messed up on the assembly even though i labeled and placed everything back like it was - took digital photos just to make sure). also, this is california model and the previous owner didn't have the little cali box - hoses were just hanging not connected or blocked (so i left them the same way for the time being)
