Problem is, do I risk the compression by cutting out a hole for exhaust fumes to go through the second exhaust or do I just keep it for show.

Andy.

I'm not sure what you are saying here. You can have the exhaust flow through both sides w/no problems.

Dual exhausts for 700GBP. this is an 01 model though...look through the posts there and you'll find the maker of this exhaust, since you're in the UK also should be easy (but costly) to have made.

I paid $50 for some new brand new Ducati cans off Ebay and got a quote of $50-60 for the welding. A little over $100 for a dual system.
