Title: beef jerky anyone?

does anyone make their own beef jerky?  i have not made any in years but i still have all the equipment from the smoker to the meat slicer to do so.  i was thinking of getting a big ass sirloin roast and doing some up.  my secret to great beef jerky is 1. quality meat and 2.  corn syrup...yup that makes it gooooood.   i do some really thin and some fat.

so do you guys make some?  if so what type?  i stick with lean, tender and sweet.  no hot stuff or teriyaki or anything like that.

Yum! I've fabricated my own homemade jerky dehydrator, with excellent results! :)

holy crap, thats pretty ingenious.  Reminds me of a 6th grade project not to be mean, but its really cool.

As for me, I gotta have a little spice to my jerky.  I'm not too big on sweet meat.

I make my own now and then, i use a dehydrator. i have a recipe that was given to me a few years back. I noticed lately that my home brew shop has seasoning for doing jerky. Kangaroo comes up great as jerky.  :thumb:

i make my own using a dehydrator.  I'll buy whatever is lean and sliced thin when I am in the store.  I like to baste on a little Lowry's marinade and add red pepper flakes.  Then I vacuum seal it in small pouches and take it backpacking.  its great.   :thumb:

i have never had roo or ostrich but have had,  moose, white tail deer, buffalo, caribou, black bear, prairie antelope, wabbit, squirrel,.  not in jersey form but Canada goose, duck, partridge, wild turkey, pigeon, quail, pheasant, .  i used to have a dog, a boxer, that would run out in the apple orchard and snag partridge for me.  big dummy would run out either snag it on the ground or sometimes in the air and hold it down til i got there.  one time he ran down a rabbit for me.  i loved that dog.  he was great keeping bear both black and grizzly out of the garbage.   other game we have around here that are easily caught and good to eat well i guess bull frog, all kinds of fish, brook trout, brown, speckled, rainbow trout, Atlantic salmon, lake trout, bass, pickerel, pike, clams, scollops, lobster, shrimp, crab, Dulce(sea weed) .   most of this food is easily caught, shot, trapped, fished or just picked up.   wild strawberry's, blueberrys, blackberrys, apples, mushrooms, truffles.   of all the wild meat i love buffalo the most,  fish i would say brook trout or sole,  shellfish lobster ,  fruit/veggies i would say blueberrys.     methods i have used to harvest include, just picking up them, using a dog, rifle, gun, spear gun,  dive knife, a net i made myself,  flashlight(bull frog).    i would go to the dock at night with nets i made myself and crab guts as bait and fish shrimp.  i would get 60-100 lbs in a night just by hand,  diving i could get so much crab, scallops or lobster that i could barely swim with it.   spear fishing is fun and much better than surface fishing.  you get to pick the species and size underwater...bam shoot it with the spear gun and take out the knife and gut it right under water as not to waste anything.  turkey i used to just wait until they came into the yard and shot them.  deer, moose and bear take much more time and effort.  same with wild fowl such as duck and goose you actually had to cam up and make a hide.  partridge, pheasant, quail, deer, rabbit, squirrel where more just tramping through the forest making allot of noise and flushing them out.  bull frog you just need a flash light and pointy stick or net.   oh i forgot about squid and octopus.  squid is best from the jetty with lights and a net.  octopus you use a stick to make them come out of their hole.   then the fight is on because the pacific giant octopus, the largest in the world, don't go without a fight.  i only fished them for some restaurants in Victoria when i was there and they asked.  my greatest underwater battle was with a 250 lb halibut.  i was diving and saw it.  so i took the shot and got him.  it barely moved so i started to move in( i had gun line attached to my spear and the spear gun with 3 heavy springs for flex)  well this bugger took off with me in tow.   Zane my diving partner said he just followed the stirred up mud trail to find me.  once he caught up i gave him the spear gun, swam up over the halibut and then straight down on top of it.  i took the spear and rammed it through it into the mud.  it was slamming around beating the shaZam! out of us.   i took out my knife and started stabbing it.  then i got in front of the big bugger pulled up its head and broke it back.  that did it.  so Zane and i were on the surface taking a breather and trying to decide how we are going to get this ashore.  we were both pretty tired and beat up.  this fish was just over 250 lbs.  so we decided to go to the bottom and swim it in that way.  we got it ashore and quickly drew a crowd including some RCMP(royal Canadian mounted police) members.   pictures were taken and we had a great story to tell.  not only that but we had a shaZam! load of halibut to share with family and friends.

I think that was the most I have seen you post in one sitting  :icon_mrgreen: Sounds like I would LOVE coming up there and hangin w/ ya.  You have hunted and eaten some cool stuff  :icon_mrgreen: I would love to expreience catching and eating all of those things  :thumb:

Ya thats pretty cool Frankie.  More meat then I ve eaten... How about squirel?  :icon_mrgreen:

Oh and as far as the jerkey?  I love jerky, my brother hunts and makes great deer jerkey.  Ill have to hit him up on that sometime soon.

ya that is a long post.  i have eaten some pretty gnarly stuff especially during escape and evasion training and exercises.  like snake, eel, porcupine,  some little ass monkey,  tree crab,  goat,  horse, ox,  some bugs, sea cucumber, whale, seal, shark, porpoise,  turtle, pretty much any bird other than birds of prey.   jellyfish(ugh like eating rubber bands)  danylions , wild nuts,  wild pig,  zebra, wildebeest,  staples like coconut, pineapple, bananas all wild, alligator, jeez that is all i can think of off the top of my head
