The rapid tire wear can be caused just by the two-up riding. The 7 is the spring pre-load and unless you weigh quite a lot is probably too high for solo riding and is what's causing the tire hop. If you have the under-seat tool kit there should be a pre-load adjustment spanner in there. There are 7 steps of preload, getting it up to 7 can be pretty hard. You start running out of room and leverage.
For an average weight rider it should be around 5, I rode with mine on 6 (220 lbs) before upgrading my rear shock. For 2 up riding you definately need it on 7.
I always prefer my preload on a softer setting for overall riding comfort.

I use to do small displacements alone daily on the bike during the midweek (30km daily) and do about 300 km on the weekend with my girlfriend.
Which is the shock position for someone like me? 5, 6 maybe?
and the tire pressure? I always ride with 40 ps on the back.

Tire pressure should be OK. I would guess 5 should be about right. 4 if you like a cushier ride.
The manual says 36psi for single rider, 41 for riding with a passenger.
33psi on the front in either case.

I set it to 3 for a while and my back started hurting, when I put it back to 4 the hurt went away, and I weight 125lbs. I think on the downswing it was compressing my back, like a long slow crack of a whip.
