Title: An AWESOME snack!!
Post by: makenzie71 on December 16, 2008, 04:21:19 PM
you need:

cucumber
cauliflower
carrots
garlic cloves (whole)
jalapenos or habaneros
dill
salt
pepper
garlic
sugar
vinegar

Pull the cauliflower apart, slice and peel the cucumber and carrots and slice the peppers.  Toss in a mixing bowl.  Season to taste...only add like a tsp or LESS of sugar because the veggies will leech some sweet themselves...I usually run pretty heavy with the salt and pepper (I really like the mccormick garlic pepper blend).  Mix it up so that all the veggies are pretty evenly coated.  Add enough vinegar to cover all the veggies and refridgerate for a couple hours...long enough for all the water to leech from the veggies.

AWESOME snack food and goes great on sammiches and shaZam!.  I'm never buying pickles again.

Yeah you start out about the same, but I don't care much for the mustard stuff.

My thing here is awesome for folks who like sour snacks.  It's kinda like pickles, just better.

Oh and keep in mind when you go to slicing stuff...too thick and the water won't leech out of it very well, but too thin and you get no crunch.  I love crunch so that's a downer for me.  I cut everything at 3/16".  The cauliflower chunks take a while to really get good and soaked...they're my favorite part but it takes an overnight soaking to get them good and sour.

ok this is going to sound wierd at first but heres my magic recipe for a great spread that you can eat as the main part of a sandwich.
Cream cheese
Fried bacon crumbled into small bits
diced jalapenos
diced sweet onions

I forgot the exact proportions.  But its only important with the bacon to cream cheese bit. The rest is to taste.  I made a batch of it lst month.  It lasted me 2 weeks.  I loved it.

That was one of our best selling spreads at the bagel shop that I worded at through college!  Jalapeno CC FTW!
