Obtaining Catfish might be a problem around here, I seem to recall on some past occasion someone suggesting a suitable alternative, as for Ostrich I got some recipes with mine and there are loads on the net, I simply seared and roasted a couple of fillets being cereful not to overcook.
dammit cal around here ostrich is not easy to find, i guess like catfish to you. lol, if only i could, hell id pay to order it in if it were possible. i ownder if anyone here is bold enough to try that nutria recipe. i am, but again, not easy to find.

Here in UK it is available on line and in some shops, I ordered my last ostrich fillets on-line from a farm in the S/West of England and you can collect them from Borough Market in London. Occasionally Tesco (the nearest thing we have to Walmart) has it but not that often.
