Better hours? When I was a chef, 14 years ago, I worked 11am to 11pm 6 days a week. I had Tuesdays off. Weekends are always the busiest and you will be lucky to get one or two off a year, I hate working them.

i have been in the same situation also in the past. the better you were the more you worked and the worse your hours became. that is why i have moved away from it over time.
this job however will be exec chef in a small high end hospital in a major city. m-f 6a-2:30p. quarterly cocktail or dinner receptions at night with a sous chef to that on to. much better than before.
Do they really need Ex chefs at hospitals. I thought they just found the worst left overs in town and slopped it on a tray. Here in Florida out of eight hospitals I go to seven of them are so bad I practically fast for my hospitalization. I didn't think you could screw up mashed potatoes but have found out you can. Or maybe they do need someone to think up of how bad they can make the food.
Are hospitals different in Cali I mean is the food actually edible?
Anyhow good luck on a job that you like!

when i was interviewing my choices for a cooking test were salmon or flat iron steak. far better than the 18,000 inmate meals i do now. that's per day by the way.
Dang I need to move there! I'm sure inmates probably eat better than most free people. And we pay for it! Flat iron steak Salmon? Wow, Sand lake is the best food in the area and I get all excited cause they have pizza. Definately, no steak or fish at alll for that matter. Usually, they just serve some form of odd looking beef which with my Chron's I can't eat beef even though the nurse tells the cafe that I still get it at least one of my meals. At St. Cloud three days in a row I got a piece of toast, boiled egg, and coffee. Can I at least get cereal and milk?
Oh well I'm glad you got a job you like. You could come down to Fl and show them how it's supposed to be! LOL
