i've got that cookbook "Cooking with Jeffery" that Dahmer put out a few years back, and the marinade is indeed the ticket- however those smaller cuts done in a pressure cooker comes out so tender you can cut em with a fork.
but. i ain't so sure about the South Louisiana stiuff, cajun food gives me heartburn.
