i know there are some food gurus here so i thought i'd share something i threw together from some leftovers after get together with some friends at the house. if your wondering it's just artichoke spinach dip with some chicken added then stuff it into manicotti and baked.

2 Tbsp butter
3 cloves garlic – minced
2.5 C fresh baby spinach – chopped
1 C Ricotta cheese
1.5 C shredded Provolone (I used an Italian mix of mozzarella & provolone)
1 can artichoke hearts – chopped
1 8 oz package Cream Cheese
4 tsp lemon juice
1 8oz bag pre-cooked fajita chicken – diced
Pinch of salt & pepper
1 container manicotti shells (14)
2 Roma Tomatoes - diced
1 Jar Alfredo sauce (I used mushroom Alfredo)

In a large skillet (med-high) melt butter and add your garlic, let the garlic just lightly brown. Add your spinach and let it just wilt (it will turn dark and limp). Turn heat down and stir in the rest of the ingredients until melted, then set aside.
Prepare manicotti as directed
Once your manicotti is done stuff with spinach artichoke mixture (I sliced mine to make it easier) and place in lightly oiled 9x11 pan (I was only able to get 8 stuffed manicotti in but the recipe will make enough for all 14). Place a few spoonfuls of Alfredo sauce over each shell, sprinkle diced tomatoes and some extra sliced spinach, and then sprinkle some extra cheese over the top.
Cook at 375 for 20-25 min

hell im lucky if i can eat yogurt now  :mad: :technical: :technical: :technical: , lol that recipe is makine me hungry lol. plus the ones wilson left on my site. those are NICE. hell even terry left oen. for some Buddha Loves Youin wings
