good question! i've been wondering that myself. but by using some reasoning, it would appear that the factory must adjust the valves when building as well, so that they might all be different and unpredictable. though i greatly look forward to hearing what the people that actually know the answer say. that's just a guess.

I was wondering the same thing. I have a extra set of shims with 6 k miles on the, along with the rest of the dissassembled motor that Suzuki wouldn't warrenty.

The exhaust valves on my 97 GS had 265 and 262 shims, I never checked the intake valve shims since they remained in spec for the 80k miles I used it.  My 02 GS came with two 265 and two 258 shims.  Replacement shims come in .05 mm increments but the factory uses inbetween sizes too.  The whole shim story for 150k GS miles on my 2 GSs:
