What is the point of extended swing arms? I think they look stupid. This is in reference to other street bikes as ive never (thankfully) seen one on a GS.

it changes the center of gravity. generally reserved for drag bikes as you want minimal lift when going WOT and dumping the clutch. the extension makes it harder for the bike to wheelie up.
and.. to each their own. my cousin has a cbr1000 with an extended swingarm (maybe not as drastic as that one pictured) but it rides really well and i like that i can dump on it and only fear how well i can hold on and not how high the front end will lift =P it also allowed for a larger diameter wheel, again to help with keeping the bike planted
as far as the pictured bike goes, i agree that's a bit of an overkill. but if it was about.. 4 inches shorter it would look sweet =P stock bikes generally have the tail a bit longer than the wheel base. i also like the look of a rear tire being a little farther back than the tail.
It also makes the bike more stable at speed in a strait line (longer wheelbase) at the expense of cornering.Cannot see any practical reason for this on a GS500 unless tuned for doing 120+

You get an exception Jim. Your bikes are sick!
extended swingarm on a gs. it is slammed as low as it will go, has a turnbuckle instead of rear shock, and runs 14.7's in the 1/4 stock carbs n airbox, v&h full system, and like a 48 tooth rear sprocket
