Title: sludge in oil

to prevent sludge the bike must be regulary driven long enough to reach normal operating temperature.My question is this:Is stop and go driving in town bad for this?I think when an aircooled motor idling it heats very well also.Can traffic riding building sludge when it is long enough?

With the modern oils I don't think sludge is an issue. I think sludge buildup is mostly in cars that go way too long between oil changes.
Just use a Quality oil and you'll be fine.
I like Motul full Synthetic myself.
I'm going to use Redline synthetic in my new motor. Not sure if you get that in Greece :dunno:
Motul is easy to find over there.
