I'm looking for a right side cover after taking a slide on my right side. The Suzuki plate fell off, but there is also a crack in it, so I'll need to find a new (or used) one.

Bars will depend on what style you want. If you want standard, on here or Ebay is probably your best bet. Hope you recover quickly!
Handlebars are a personal preference. If you want stock, you can find a pair on here or eBay. I have a set off a Vstrom 1000 because I like the more upright riding position.
Any decent motorcycle shop will have a wide variety of handle bars to choose from. You can usually get a brand new cheap steel handlebar for $25 or so. Aluminum bars are lighter and less likely to bend but also transmits more vibrations and cost more. Most stock handlebars are steel.
Be aware that any bar not designed for Suzuki controls will likely need drilling for the little plastic nubs that keep the handlebar controls from rotating.
Or clip off the plastic nubs :)
I was looking at the right controls and the hole in the handlebars, then realized the crash clipped off the nubs for me, ha. I bought some black aftermarket bars on EBay. I'll probably have to file off some paint where it touches the brackets so that it grounds (it took me forever to figure out that "electrical problem" on another bike when I bought new painted handlebars.)
As far as I'm aware the controls on the gs500 do not ground through the handle bars.
If I'm wrong, though, that might explain some stuff... ...
I had an old Honda that I bought painted handlebars for, and nothing worked after I put them on. I thought my battery was dead, then I thought I had a bad connection somewhere that I had missed. Then it dawned on me that the controls ground through the handlebars. After sanding the paint off under the controls and where the bars touch the brackets, my electrical problems disappeared. Go figure!

I have always replaced the right side cover with one like chuck81 makes, especially on my track bikes. For less than $50 you have a real cover to protect the more expensive parts underneath, which could easily cost $100+ to replace. Plus these covers can take multiple hits.
