New to the world of GS500's. Do they have any temp sensors ? Being an air cooled engine i wouldn't think so, but would like to double check.
A guy at a bike repair said, it could be the temp sensor making my bike rev at 6k. I thought valve clearance, air leak, or something with possible linkages on the carb.
No temp sensors.
You need a new shop.
6k revving at idle is cable hanging, choke hanging, idle screw being too far open, vacuum leak and if all that fails - lean as fruck jetting the EPA of the lovely USA blessed us with.

Would valve clearance also have anything to do with it ? I have only just bought the bike, so don't know when it was done last.

The only way valves would come in to play is if the PO set the idle crazy high to compensate for very low/no compression (due to bent/burnt valves). But, I seriously doubt that's the issue. Like Buddha said, check the Idle Adjustment Screw (http://wiki.gstwins.com/index.php?n=Maintenance.AdjustIdle). Then, you still have issues when that is adjusted properly, check your throttle cable free play, if that's fine, make sure the cable itself isn't sticking, etc. Do the same with the choke cable. Then, if you still have issues, check for vacuum leaks.

Try lowering idle with the idle screw after its fully warmed up. If you get to 2k and the bike just stalls, then your valves could be the issue.
I doubt it, I think hanging cable or idle screw screwed way too far in may be the issue.

going to rip the tank etc off it on the weekend, and have a good look over the linkages, etc, and hopefully i will find the answer there. Will warm it up, and I'm going to make a video recording before i take anything off, to show what it's doing, may help people understand what i'm talking about.
could also check cable issue ( see if too short) by starting and see if speed changes by turning handle to full lock/stop. ya no temp sensors. i know you could add those if you were handy with computer parts. and had the absolute desire to add them. but frig no theyve never had them. bikes as simple as it gets. no need for sensors. there is however a possible need for a new service place. ( you could confirm that if you called and asked for both a water pump plus a radiator cap for a gs500 )

Will be checking all cables. There feels like no play at the throttle. Will be looking at the choke, throttle, idle screw, and test for leaks. Just want to get it sorted, so i can go for a ride.

Bingo - that is bad. Play in cable = throttle closing fully (atleast to idle screw). No play = cable holding butterflies open.
