Title says it all. Have the opportunity to grab some 1995 carbs and am wondering if they would work on a 2001 GS500? I've seen forum posts about forward compatibility (e.g. 2000s carbs on a 90s bike) but have not seen anything about the reverse (90s carbs on a 2000s bike).

I don't know in what years the changes were made but the primary differences will be the throttle cable in later models is a push-pull pair, whereas in the earlier ones it's just a single cable. Also the newer models have a bunch of emissions junk that doesn't exist in the older ones.
So the worst case is having to also swap out the throttle assembly and either remove or simply not connect the smog stuff.
As far as I know, everything else should be 1:1.
Inlets are different as well, you'll need the rubber boots from the model of the carbs in order to connect the carbs to the bike.
Awesome -- so it sounds like convert to the old throttle cable setup and switch out the intake boots and I'm good to go!
