I have a 1998 GS500E that I rode daily for several years, then on weekends occasionally for a couple more years. When I moved cross-country, I had to drain all the fluids for shipping, and it's been sitting that way for about 5 years.
I've done all the regular maintenance before -- changing oil, adjusting shims, cleaning carbs, replacing fuel lines, brakes; I even did a few larger projects like replacing the front fork seals and swapping in a GSXR rear shock.
But given that the bike has been sitting so long, I'm wondering what other things I should check or replace.
I have to replace all the fluids and fuel lines. There might be a few spots of rust in the tank, but it looks pretty clean. Should probably replace the tires? Anything else I should be taking a look at?

You should be fine with fluids and hoses. Tank rust is a creeping problem. The crap pockets that you cant see or drain or do much about is the worst. Try a fuel filter. If you find rust try coating the tank.
