Title: Carburetor issues

Seeing as this is just open to air, does it matter that the end broke off?
Or will that matter

You need to cap that off. They have plates made for that someone on this site was making them awhile back

its the middle tee. it broke off on one of the brass parts going in to the tee. does it matter as the middle tee is open to the air?

I think that's just the vent line? The bottom one should be fuel and the weird brass nipple on the right carb is vacuum. Idk if that's what you're asking though?

Yes, it just tee's off to a long breather hose. Just get some tubing and extend both sides, so you end up with 2 breather hoses instead of 1.
