Why does the oil level go down?

Stupid question maybe, but what happens to the engine oil when you have no apparent leak or blown gaskets, yet you still need to top it up about 300ml every couple of thousand miles?  Does it evaporate?

some leaks down along the valve stems past the valve seals
some gets past the oil rings
air cooled engines at their best use a little oil
