97 Runs reaallly bad

Hello!
I bought a 97 Gs500e a few months ago and have been loving it. 2 Days ago I was riding it quite hard and practicing wheelies (on a private road of course  ). I got gas, started it back up, and it sounds chunky, like it's being starved of something. I assume it's a carb issue. I redid the fuel lines recently, but haven't done much to the bike. Oil level is good and looks clean.

Rode hard, was sitting high in rpms for a while
Got gas, started, chunky. didn't rev passed 4k. it might have been able too but it didn't sound right so i didn't.
Today, dies if you let off the throttle or give it too much. sometimes it'll even start itself back up moments after dying. Going to pull carbs and clean them out but am curious of any ideas of what this could be. bike has no issues prior to this (atleast under my owner ship. last owner was an @$$hole and tried to fight me so i have no information)
