Would it be possible to make linked brakes for GS like they have on VFR800?
05 SV650S, 02 GS500 (gone)

With hydraulics, money, and time anything is possible.  I guess you would need all the parts off the Honda between the brake reservoirs and the calipers.  But it probably wouldn't be worth it.  A better idea would be to fit ABS.
