Final Tweaks on Carbs -- need some suggestions

Hi All -

I recently rebuilt the carbs from a GS that had been sitting for about 8 months. After all the great help from you guys on the board, I was able to get the bike running really well, it was just REALLY REALLY REALLY RICH. I suppose this was masking another problem by turning the air/fuel screws out to like 3 3/4 turns. I played around with the screws yesterday to try and reset the carbs to something normal. (The plugs were black and wet by the way). Anyhow, I was able to find a semi-happy medium. The bike is pretty boggy now on startup, but the choke actually does something. Its funny, I noticed this when playing around with the adjustments -- if you make the mix really really rich, the bike idles very low and the choke doesn't do much. If you make the bike really lean, the bike gets boggy when you dump on the throttle when it is not 100% warmed but, but the choke when you put it on makes the bike rev up to 10,000 rpms! -- It revs up so you have to adjust the choke down to keep the bike at a normal idle. Wha tI would like to do is find the happy medium where the spark plugs are not black and wet, but also the bike revs up good and doesn't hesitate, this has almost caused a couple accidents when the bike dies in an intersection while trying to start the bike from a stop -- even when the bike is all warmed up.

So I'm kind of left at that. I replaced a bunch of gaskets and o-rings, I replaced all the fuel hoses. Everything looks good. The bike has the bogging down problem at high speed, from what I can tell, this is possible from being set too rich and the carbs wanting more fuel that the system can deliver. I put on clear fuel hoses and you can see the air bubbles moving down the line to the carbs when you rev it up.

Anyway, I wanted to see what people had to suggest. The carbs are 100% stock right now, no modifications or jetting has been done.
